Breakfast Puff Pastry Pizza
After couple busy weeks of summer, I am back with another breakfast dish. This one is part pastry, part pizza party with the buttery puff pastry that serves as the base for this crowd pleaser.
You can make a number of variations such as:
Broccoli (1/2 cup bite sized florets), onion (1/2 medium onion, thinly sliced) and bacon (4 slices, chopped), 1 tsp chives
Ham (1/2 cup) and spinach (1 cup, chopped)
Asparagus (4-5 chopped in 4ths), shallot (thinly sliced) and prosciutto (3-4 slices;)
Heirloom tomato (sliced), marinated artichoke (drained and patted dry and basil
Chorizo (1/2 cup) and potato (1 russet diced)
The trick is to precook your ingredients, layer them in the center and bring the sides of the puff pastry over them to create a pocket for the eggs and voila!
Serves 2-4
1 puff pastry sheet (Dufour Pastry is my favorite!)
4 large eggs beaten + 1 egg for brushing
1/4 cup whipping cream
Salt and pepper

Baking sheet with walls (in case the egg oozes out)

Method
Thaw the puff pastry sheet in the refrigerator until soft. Line the baking sheet with parchment paper and set aside.
Preheat oven to 400 F and precook your toppings on the stove top. Once they are done set aside.
Whisk together your 4 eggs, whipping cream, salt and pepper and set aside.
Arrange puff pastry on a baking sheet.
Layer each topping in the center of the puff pastry to no bigger than 2/3 of the entire puff pastry. Then drape all sides of the pastry about 1/2 inch from the edge of the toppings.
Pinch down any openings on the folds to ensure egg does not escape.
Now brush or sprinkle the crust of the puff pastry with egg so it will get a nice golden crust.
Carefully pour the egg mixture over the toppings (make sure you are checking then pinching out any leaks before putting in the oven).
Put in oven and bake for 20 minutes or until egg has set.
Once ready, allow to rest for 1-2 minutes before cutting. Serve a wedge with a leafy green salad, top with chives or herbs and enjoy this buttery, savory and crunchy breakfast dish!
