Montucky Mussels
While summer time is usually when I opt for a crisp french rose (heavy on the grenache), once and a while, a cold crisp cold snack is in order. Montucky Cold Snacks are one style that we regularly have stocked to help quench thirsts after long, hot hikes or even after earning some turns in the backcountry. Ive been wanting to cook something with it so when I ordered Totten Inlet Mussels from Taylor Shellfish, I thought THIS IS IT - MONTUCKY MUSSELS!
Serves 2-4
1 can (12oz) of Montucky Cold Snack Lager
1-2 lbs of mussels (debearded and scrubbed of barnacles; I order the Totten Inlet Mussels from Taylor Shellfish)
3 tbsp whole grain mustard like Mallie Old Style Mustard
2 tbsp butter
1/2 very thinly sliced white onion (I use a mandolin)
3 thinly sliced garlic cloves
1/4 cup chopped parsley
Additional items
Dutch oven with cover
Method
Heat dutch oven on medium high and melt butter. Once hot sautee onions until soft and then add garlice for 1-2 minutes.
Take 3 heaping tablespoons of whole grain mustard and toss with onions and garlic.
Carefully add your mussels and pour an entire can of Montucky Cold Snack lager over the mussels. Cover immediatley and allow to steam for 10-12 minutes or until all mussels are opened. Discard any mussels that do not open.
Once ready, sprinkle with parsley and serve in deep bowls with crusty sourdough bread or pretzel rolls for dipping. Lastly, enjoy with a “side” of Cold Snack of course!
