Grilled Cardamom Apple Crumble

Serves 2 

Filling

3-4 crab apples from my back yard πŸ˜œ(or 1-2 medium sized apples )

1-2 tbsp of lemon juice 

1 tbsp coconut sugar (or whatever sugar you have)

1/2 tsp cardamom

Topping 

1/4 cup of steel cut or rolled oats (or half oats half walnuts)

2 tbsp flour

2 tbsp brown sugar

1/4 tsp cinnamon 

1/4 tsp flaky salt

4 tbsp butter


Method

  • Preheat grill to 450F (oven is ok too) and butter the bottom of a grill safe dish (I used a 6in paella pan)

  • Mix dry ingredients for topping and set aside.

  • Dice the butter into small squares and put it in the freezer

  • Finely slice the apples and toss in lemon juice (I used a mandolin so got them paper thin but if you don’t have one you make just want to cook it 5 -10 min longer)

  • Toss in coconut sugar and cardamom and layer the dish with the apples until filled

  • Using your hands, crumble the frozen butter with the topping ingredients until it is mostly mixed together and press over apples

  • Put the pan over indirect heat and grill for 20- 25 minutes (checking half way to make sure it doesn’t burn; our Weber gets really hot so mine crisped up fast!)

  • If baking, do so for 35-40 minutes or until top is crisp & golden!
